New USM initiative aiming to improve school lunches nationwide
HATTIESBURG, MS (WDAM) - In an effort to help make school lunches healthier, two research scientists are doing their part to improve school meals around the country through the "Team Up" initiative.
Marjuyua Lartey and Keith Rushing are research scientists at The University of Southern Mississippi.
Lartey developed the workshop, and Rushing was hands-on in the follow-up studies.
Rushing talked about the objective of the program.
"The institute's ultimate objective is for us to be providing healthy meals for kids. And not just providing healthy meals for kids, but also demonstrating to kids how to eat healthy," Rushing said.
Lartey elaborated on the workshop, and spoke about it from the point of view of nutrition directors.
"Ideally, what we want school nutrition directors to take home is they can do it, and they are able to do it, and for the most part that's what we saw," Lartey said.
Rushing said, "One of the major objectives of the workshop was for school nutrition directors to leave with goals and action plans."
