We have one week left until autumn is officially here. Hattiesburg dietitian, Stephanie Owen, has been helping the Pine Belt savor the last tastes of summer by preparing dishes with avocados to strawberries and bananas. For the last recipe, she prepares a dish using another one of summer's staple fruits: peaches.
"Peaches are full of vitamin A, which is for vision health and eye health," Owen said. "You also have vitamin C and E which are really good antioxidants. It's really good for your immune system with flu season right around the corner. Of course you have fiber which helps with digestive issues."
Summer Peach Salsa:
- 1 1/2 cup of diced peaches (about 4)
- 3/4 cup of diced cherry tomatoes
- 1 fresh jalapeno
- 3 tbsp chopped fresh basil
- 2 tbsp chopped red onion
- 1 tbsp lime juice
- 1/2 tsp brown sugar
- 1/4 tsp salt
Mix all the ingredients together in a bowl and it's ready to serve!
Owen said don't let the tortilla chips bother you, this dish is only 18 calories per serving.
