Hattiesburg Clinic dietitian makes summer dish for Labor Day cookout

There are only three weeks until Autumn, and some say Summer is officially over come Labor Day. But you can take these last few weeks to enjoy the last tastes of summer.

Hattiesburg Clinic Dietitian, Stephanie Owen made a summer "superfood" recipe that you can add to your Labor Day cookout. It's a tomato corn stuffed avocado dish. Owen said the "superfood" ingredient is the avocado.

"We have the avocado which is a fabulous superfood," Owen said. "It has properties that can help lower your cholesterol, help lower your triglycerides, help raise your good cholesterol, your HDL. It also helps with the aging process, help with wrinkles. That is why there are so many masks out there with avocado in it. Also, it helps with heart disease, it decreases your chances of heart disease," Owen said.

Tomato Corn Stuffed Avocado Recipe:

1 tomato, chopped

1/2 cup corn kernels

1/4 cup of feta cheese crumbles

1/4 cup of fresh cilantro, chopped

1 tablespoon lime juice

2 avocados, halved and pitted

In a bowl, mix the tomato, corn, feta cheese, cilantro, lime juice, and whatever seasoning you prefer. Then, spoon the mixture over the top of the four avocado halves. Owen said this dish can be served cold or you could take your corn and avocado to the grill for Labor Day. She says if you don't like avocados try making this as a salad.

"Just make the corn, tomato salad, put it in the refrigerator and put it on the table Labor Day and you are set," Owen said.
