Crawfish are typically available beginning in November but the season's peak usually occurs in the few months following Easter.
Most seafood markets sell crawfish by the pound or the sack, either boiled or live. Although they can be used in a variety of delicious dishes, crawfish are often simply boiled and served with sausage, potatoes, and corn.
