A hot bowl of soup probably sounds pretty good for a winter night with temperatures in the teens. Hattiesburg Clinic Dietician Stephanie Owens shared a lentil soup recipe which includes three winter "superfoods." Lentils, zucchini and carrots.
All these are high in fiber. Fiber can help lower your cholesterol, help with digestion problems and its healthy for your heart.
Winter Super foods Lentil Soup:
1 pound of turkey sausage or Italian sausage
1 large onion
1 celery stalk
6 cups of low sodium chicken broth
2 14.5 ounce cans of diced tomatoes
1 teaspoon of minced garlic
2 cups of lentils
1 teaspoon of salt
Quarter of a teaspoon of black pepper
Quarter of a teaspoon of thyme
Quarter of a teaspoon of oregano leaves
Quarter of a teaspoon of basil
Quarter of a teaspoon of parsley
1 teaspoon of red pepper flakes
All of the spices are dried not fresh.
Owens said you can place all these ingredients in a crock pot, and let it cook for six hours. You can also cook it in a crock pot,set on low for eight hours if you are headed to work.
